There’s a book you can check out: 99 Ways to Cut, Sew and Deck Out Your Denim. Some of the projects have very little sewing involved and there are plenty of projects that are not clothing-based or gender-specific. You could ask them to bring in an old pair of jeans or pick some up at a thrift store and use various scraps or buttons to be creative.
you might want to try something like a bird feederr, or try something that would have everything precut so that the work is minimal and easy.

Have them make models. The base of the model can be made of cardboard. You can add buildings made from milk cartons, cardboard or whatever you have that looks like a building that’s lying around. You can make people and animals and stuff out of home-made play dough. You can also add flowers, trees, rivers, lakes, and other nature stuff. Just add as much detail as you like.
Most of the model can be made from stuff you already have. Others you can make or buy that are inexpensive. The only things you’d have to buy is maybe glue, paint, paint brushes and a few other types of art supplies.
Kids love doing this and is very easy and inexpensive. Adults will also love this project. You can do a project like this for days, even weeks.
Cross-stitching, especially painted items are just what you are looking for. Also, you can try needlepoint (on printed canvas/half cross-stitch) if your group finds cross-stitching too challenging.
Good to start with small projects for which you get the source easily like sand, wood etc. If they available to you easily.
